8 Thick butcher Pork Sausages
2 x Coxes apples
1 Tin plum tomatoes
1 Tin Butter bean
Heaped tsp of smoked paprika
1 large Onion
1pint of water
4oz SR flour
2oz butter
Grated cheese
Splash of milk
Salt & Pepper to season
Fry the sausages, and sliced onion until brown, add the tomatoes and butter beans, along with the paprika, peeled sliced apples, and water.
Simmer slowly until Sauce has reduced and started to thicken.
Mix the flour and butter until it resembles bread crumb, add the milk and mix until a dough like consistency
Roll out and cut into small scone size, and brush with egg and sprinkle with cheese, then lie on top of the sausages and bake in the oven until golden brown.
This Dish is just what you need to come home to after a long walk on the Pembrokeshire Coastal path on a cold autumn day.
The Sausages I used were bought from Fred Hughes butcher situated in Haverfordwest, who is renowned for his own Pork sausage recipy.
