Featured Recipe

At this time of year in Pembrokeshire Seasonal Fruit and Vegetables are grown in there plentiful, from Pembrokeshire New Potatoes to Asparagus.

At the moment Asparagus is in Season and is readily found in our local Supermarkets, and Green grocers through out the County. There is also the opportunity to pick your own Asparagus near Manorbier, and it is available to purchase in the local farmers markets.

For this recipe all the ingredients have been grown locally in the county, the Asparagus was sourced from a local green grocers in Tenby and the Duck eggs used , were from a local Farm and purchased from the weekly Sunday market in Carew. 

 
Asparagus & Salmon Tart

Short crust pastry (to line a7in Flan dish)
1x Med fillet of cooked Salmon
5x Asparagus stalks trimmed and cut into 2inch pieces
2x free range duck eggs
¼ pint of double cream
2oz grated cheese
Salt & pepper to season

 
Method

Roll out and line a7inch flan dish with the pastry, and blind bake for 20mins until golden brown.
Par boil the Asparagus, and gently shred the Salmon and sprinkle into the flan dish, also sprinkle the
Grated cheese on top of the Salmon and Asparagus.
Whisk together the eggs and the cream to make a custard, and season with salt and pepper and
Pour onto the salmon, Asparagus and cheese.
Cook in a med hot oven 180 or Gas mark 4 until firm to the touch.
Serve with homemade coleslaw and some nice green salad leaves.
